Lemon Sweet Potatoes

Ingredients
6 medium sweet potatoes 4 tablespoons water 1½ tablespoon dry thyme leaves 3 teaspoons minced garlic ½ teaspoon crushed red pepper flakes ½ cup lemon juice
Directions
Scrub and wash the yams and sweet potatoes. Then cut them in 1½ inch round circles. Add the rest of the ingredients, toss, and let marinate for ½ hour. Next, put them on a large cookie sheet (lined with no stick foil), (Cooking parchment would be another option.) pour the marinade over them, and bake them at 350 for about 1 hour. Freeze the remaining ones. They great for on the run snack.
