Chicken Stir-fry

1 cup White long grain rice2 chicken breasts, cubed into bite-sized pieces1 cup silced carrots2 cups cut broccoli1 jar of baby corn (optional, not factored into the nutritional facts)1 cup red peppers chopped1 cup green peppers chopped1 cup yellow peppers chopped1 tbsp olive oil3 tbsp soy sauce1/2 tsp ground ginger1/8 cup water
Begin cooking rice.
Put 1 tbsp olive oil and water in a pan and begin to cook carrots over a medium heat for 5 minutes.
After 5 minutes, add the chicken. Cook for 5 minutes.
After another 5 minutes, add other vegetables, soy sauce and ginger.
Cook over medium high heat for 15 minutes, stirring regularly, or until liquid boils down.
Serve over rice.
