Roasted summer Veggies

Ingredients
One good larger sized Eggplant cubed2 medium Zucchini's cubed2 MediumYellow squash cubedone large onion cubed4 cloves of garlic chopped.75 cup blue cheese3 Tbls Safflower oilSalt and pepper
Directions
Cube Veggies
place in pan that has been sprayed with cooking spray
coat with oil and salt and pepper to taste
roast in oven or on grill for about an hour or until softened
pull out of oven add cheese and enjoy.
