Turkey Smoked Sausage and Bean Stew

Ingredients
1 Tbsp Olive Oil4 Garlic Cloves, minced1 Medium Onion, raw, diced 2 Small (or 1 Large) Carrot, diced1-2 stalks Celery, diced1/2 cup Jalapeno Sliced, pickled (or 1-2 small fresh Jalapenos)1 Red Chili Pepper, fresh, diced1 cup Tri-Colored Peppers (frozen or fresh), diced2 Beef Boullion Cubes1 Tbsp Chili powder1 Tbsp Cumin1 tsp Paprika1 tsp Basil, dried1/4 tsp Black Pepper, freshly ground1/4 tsp Sea Salt2 cups Beet Greens (or your choice of spinach or other greens), chopped1 Large (or 2 small) Tomatoes, fresh, chopped1 Can (15.5 oz) Red Beans (or bean of your choice), rinsed8 oz Smoked Turkey Sausage (kielbasa-style), diced2 Tbsp Apple Cider Vinegar (or lemon juice)2 cups of Water
Directions
On a medium flame, heat Olive Oil in a Dutch Oven. Add Onions and Garlic, saute for 2-3 minutes.

Add Jalapeno, Chili Peppers, (also Bell Peppers if fresh), Carrots, and Celery. Cook for 4-5 minutes (add a bit of the 2 cups of water if necessary to prevent sticking).

If Bell Peppers were frozen, add these now, along with chopped Tomatoes, Boullion Cubes, and all spices listed and cover with lid.

Once this begins to simmer, add in Greens (or spinach), about 1/4 cup of the 2 cups of water, turn to low, cover and simmer until greens are wilted.

Add Beans, Sausage, Vinegar and the remainder of the water. Cover and simmer for about 10 minutes.

Serve over rice, or with crusty whole grain bread.
