Un-Chicken Salad

Ingredients
1 Block extra-firm tofu, diced1T Vegetarian chicken-flavored broth base +water to cover (wylers is my favorite, though there are tons of great options out there!)1T low-sodium soy sauce5T light mayonaisse1c grapes, halved1/2c diced celery1/4c minced onionSage, salt, and pepper to taste
Directions
Marinate diced tofu in broth and soy sauce at least 15 minutes.

Spread tofu chunks onto a cooking sheet and bake @400 for about 20 minutes until edges are crispy. Reserve marinade liquid to add into finished salad if it's a little too dry.

Transfer baked tofu into bowl and stir in mayo, grapes, celery, onion, seasonings.

Refrigerate and enjoy!
