Garlic and Red Pepper Humus

Ingredients
1 can garbanzo beans, drained1 roasted red pepper1 tablespoon lemon juice (add more to taste)1 1/2 tablespoons tahini2 cloves garlic, chopped (add more to taste)1/2 teaspoon cumin, ground or seeds1/4 teaspoon salt
Directions
Add all ingredients together in a blender or food processor. Process until the mixture is relatively smooth.

To make an easier addition of garlic use the small part of a cheese grater.

Refrigerate for 1 hour to allow flavors to develop.

Can be eaten on chips, pita bread, with olive or tomatoes. Make a great addition to a sandwich.

Makes 8 servings.

    I really liked it. I'm not crazy about the flavor of tahini
    so I went lighter than what the recipe called for. It was good though - 4/22/08

    When I don't have any tahini I make it without it and it still tastes fine. I'm a garlic fanatic though, so I usually add extra. :-) Glad you liked it, I think it tastes better over time.
