Cream of Broccoli Soup

Ingredients
1 1/2 cups chicken broth1 Tbs butter1 Tbs flour1/4 tsp salt1 C milk4 cups of fresh or frozen broccoli, chopped1/4 tsp lemon-pepper1/2 C shredded cheddar cheese
Directions
1. In a large saucepan, cook broccoli, covered, in a large amount of boiling water for 8 to 10 minutes or until tender; drain. Reserve 1 cup of broccoli.

2. In a food processor bowl combine remaining cooked broccoli and 3/4 cup of the broth. Cover; process about 1 minute or until smooth. Set aside.

3. In the same saucepan melt butter. Stir in flour, seasoning, salt, and pepper. Add milk all at once. Cook and stir until slighly thickened and bubbly. Cook and stir for 1 minute more.

4. Stir in the reerved 1 cup broccoli, blended broccoli mixture, cheese, and remaining 3/4 cup broth. Cook and stir until heated through. Season to taste with additional salt and pepper.

Serving Size: Makes 4 side-dish servings (about 4 1/2 cups)
