Braised Chicken with White Wine and Apricots

1 small onion, chopped1/2 cup dried pitted apricots1 clove garlic1/2 tsp paprika1 tsp ground coriander1 tsp ground cumin1 tbsp light olive oil1 lb bone-in chicken thighs, skin removed (about 4-6 chicken thighs)1 cup white wine1 1/2 cups low sodium chicken brothsalt and pepper
1. Chop the onion, garlic, and apricots in a food processor.
2. Heat half of oil in Dutch oven. Season chicken with salt and pepper and sear on both sides; remove to a plate. Drain excess rendered fat from pan and place back on burner.
3. Add remaining oil, then add apricot mixture and saute until onions are translucent. Add wine, broth, and seasonings. Bring to boil, reduce to simmer, and submerge chicken.
4. Cook chicken, partially covered, 20 min. Remove lid and allow sauce to evaporate for 5 more minutes.
