Fast Broccoli Cauliflower Casserole

2 cups cooked cauliflower (fresh or frozen)2 cups cooked broccoli (fresh or frozen)1 can condensed broccoli cheddar soup1/2 c 1% milk1 t salt1/4 t pepper1 t garlic powder (or 1-1/2 t dried minced garlic)1 cup shredded 2% milk cheese1/2 stick butter1/2 package Ritz crackers (approx. 3 servings)
Preheat oven to 400 degrees. Combine soup, milk, salt, pepper and garlic, then stir in veggies and cheese. Pour into square or round casserole dish, top with 1/2 of butter in pieces. Cook for 15 minutes and stir. Top with crushed Ritz crackers and remaining butter, melted. Cook for an additional 15 minutes or until brown and bubbly!
