Ingredients
Brown rice med grain (enough for two cups cooked.)2 Tblsp olive oil 1 large onion sliced2 med chicken breasts cut in half (no skin)1 cup salsa4 cups fresh shredded lettuce1 cup chopped fresh tomatoes
Directions
Start Rice cooking on stove or in microwave. Pour oil into frying pan, saute onions and remove them. Cook chicken breast pieces in frying pan until done, add salsa, stir up a bit, until some but not all of the liquid is gone. Turn off stove, remove pan from burner, set aside. When rice is done plate equal portions of rice onto four plates, add sauteed onions on top of rice, place equal portions of chicken and salsa onto each plate. Serve each plate with a small light salad of 1 cup fresh shredded lettuce and 1/4 cup chopped or sliced fresh tomatoes. Enjoy!

Serving Size: Each plate has 1 seared chicken breast piece, with 1/4 cup salsa, 1/2 cup brown rice topped with sauteed onions, served with a light salad of 1cup lettuce and 1/4 cup tomato
