Ingredients:.5 cupOnions, raw, chopped 1 tsp. Newman's Own Organic Extra Virgin Olive Oil, 1 cup*Summer Squash, sliced 2 cups Spinach, frozen, chopped1 clove garlic, minced(12) Grape Tomatos 2 tbspAthenos crumbled feta cheese traditional,
Directions
Saute onion in olive oil, add squash and stir. Add garlic, salt & pepper to taste; add spinach; stir. Cover and cook over low heat until squash is tender; toss in tomatoes and stir-cook just until tomatoes are hot. Place 1 cup of vege's on plate, top with 1 TBS crumbled feta cheese. Enjoy!
