Ingredients
1/2 cup Oat Flour (I processed regular rolled oats to flour)1/2 cup Whole Wheat Pastry Flour2 Egg-beater Egg Whites (or 4 whites from eggs)2 scoops Vanilla Whey Protein Powder (I used Beverly UMP brand, at 130 cals & 20 g protein per scoop)1/2 cup Splenda, Truvia, or Ideal1/2 tsp Baking Soda1/4 tsp Salt1/2 cup Unsweetened Applesauce1 medium mashed banana4 tbsp Baking Cocoa4oz Water2 T. chopped pecans (optional- but included in nutrition)
Directions
1. Preheat oven to 350 degrees.
2. Mix dry ingredients (oat flower, vanilla whey protein, baking soda, salt, baking cocoa) together in a large bowl.
3. Whisk together wet ingredients (egg whites, Splenda, Truvia, or Ideal, Applesauce, Banana, Water) together in a medium sized bowl.
4. Add wet ingredients to dry ingredients and mix together.
5. Spray an 8" x 8" or 9" x 9" cooking dish (glass or metal would work, I imagine) with a non stick butter spray (or line with parchment) and add batter to dish. Sprinkle chopped nuts over top (if using- optional).
6. Bake 20-30 minutes in oven. (I baked for about 24 minutes in a 9x9 glass dish- perfect!)

This looks good, but what size baking dish? Is it a dish (glass) or a pan (metal)? - 6/20/11

I baked in a 9x9 glass dish. I imagine a pan would work just fine too! For the glass dish, 24 minutes was the perfect bake time.
