Pampered Chef Family Burrito Bake

1 med onion1 lb of 90% lean ground beef2 tbsp of Pampered Chef Southwest Seasoning (or sub with Taco seasoning mix)2 garlic cloves1 can Mexican-style corn, drained (11 oz)1 jar (12oz or more) chunky salsa, divided1 can (16oz) refried beans3 tbsp water7 (6 inch) corn tortillas2 cups shredded Colby and Monterey Jack cheese blend, divided
1. Chop onion with Food Chopper. In Deep Covered Baker, combine onion, beef, seasonings, and pressed garlic; mix well. Microwave covered on high for 6-8 min or until beef no longer pink. Breaking into crumbles halfway through using Mix N' Chop. Drain beef mixture. In bowl combine beef mixture, corn, and 1 cup of the salsa, mix well. Combine beans and water in small bowl and mix well.
2. To assemble, place 2 tortillas over bottom of baker. Cut one tortilla to fill any gaps as layers are assembled. Spread 1/3 beans evenly over tortillas. Top with 1/3 beef mixuture and 1/3 of the cheese. Repeat layers one time. Arrange remaining 2 tortillas over cheese. Top with remaining beans and beef mixture.
3. Microwave, covered, on High for 12-15 minutes or until center is hot. Carefully removed lid and top evenly with remaining salsa and cheese. Let stand, covered, 10 min before serving!
