Chicken Stir Fry

Ingredients
Green PepperRed Peppers1 cup chopped Carrots raw1 cup sliced mushrooms1 Yellow Onion1 clove Garlic2 tbsp Olive Oil Approx. 1 lb Chicken Breast, no skin/bone
Directions
Chop peppers and onion into strips approx. 1/8th of an inch wide
Mix with carrots and mushrooms in mixing bowl
Cube chicken and place in separate bowl
Place olive oil and garlic in pan, heat
When the garlic starts bubbling, add vegetables
Stir approx. 5 minutes until mushrooms start to brown
Add chicken
Stir until chicken is fully cooked.
Cool and serve
