Russian Draniki (Potato Pancakes)

Ingredients
Ingredients: 10 medium potatoes 1 medium/large onion 1 egg 3 tbs white flour 1 tsp salt 0.25 cups kefir/butter milk/milk 0.5 tsp baking soda about 5/6 tablespoons of vegetable oil (to fry them in)
Directions
1. Wash and peel the potatoes
2. Grate all the potatoes into a large dish
3. Grate the onion into the same dish
4. Add the egg, flour, and salt
5. Pour the buttermilk/milk into a cup and add the baking soda, stirring vigorously. Let the mixture foam up and add it to the dish.
6. Stir the ingredients until uniform. The mix has to be nice and thin so it can be poured.
7.Heat a thin layer of vegetable oil in a pan on medium heat.
8. Pour or spoon the mixture into the pan.
9. Once the edges star to brown, flip over.

Serving Size: makes 20-30 pancakes
