Ingredients
Eggplant - about 2 - 3 cups1 lb ground chicken or turkey1/2 lb ground beef1 med onion, chopped2 cloves garlic, chopped1 cup red or green pepper, chopped2 C marinara sauce (no sugar added)1 Tbs parsley1 Tbs oreganopepper to taste
Directions
peel and cube the eggplant into 1 in cubes.
place in a skillet with marinara sauce and simmer for 10 - 15 min or until the eggplant is soft.
Brown the hamburger, garlic, onion and peppers in a seperate skillet. Drain off any excess fat. Add remaining ingredients. Cok over medium-low heat, covered for 20 min. adding pepper to taste, stiring occasionally.
