Carrot cake Delicious and Healthy

Ingredients
Liquid:3 eggs whites1 cup1% milk(you can use soy milk if you want.it tastes great too)1 1/4 vanilla escence or extract(recipe uses escence)1/2 apple sauce natural( I used mott's)Powder:1 cup brown sugar1/5 tsp ground nutmeg1 tbs ground Cinnamon1 tsp baking soda1 1/4 tsp baking powder1 cup whole wheat flour1/2 cup white allporpouse flourSolid:1 cup of gratted carrots3/4 cup chopped walnuts3/4 cup black raissins
Directions
1. Preheat the oven to 350 degrees F (175 degrees C).
Grease a 11X7 inch pan lightly with margarine and a little bit of the white flour(about half tbsp)or use non-fat canola cooking spray.(calorie counter uses margarine 40% fat)
2. Beat egg whites in a large mixing bowl. Pour all the liquids together:applesauce, milk, and vanilla
3.In another bowl mix all the powders together: sugar, nutmeg, cinnamon, baking soda, baking powder,and both flours.
4.Mix the powder part with the liquid part, and lastly stir in the carrots, walnuts, and raisins. 5.Pour batter into the greased pan.
6. Bake in the oven for 35 - 40 minutes . To check when cake is ready, insert a toothpick in the center. If it comes out clean, its ready to cool and serve.
Makes 15 squared cakes.
