Low Carb Coconut Macaroons (with optional almonds)

Ingredients
Mix together:2 cups dried, unsweetened coconut2 Tbsp water1 tsp vanilla1/2 erythritol or your favorite low carb sweetener3 egg whites4 Tbsp melted butter1/4 tsp kosher salt
Directions
Let this mixture sit for 10 minutes so that the dried coconut soaks up the liquids. Form into 32-35 balls and place on parchment paper covered baking pan (a Silpat will also work). Bake at 325 degrees for about 15 to 20 minutes or until just turning golden. Cool on a baking rack.

Serving Size: Makes 35 small-sized cookies. Fiber count on these should be at least 1 -2 g per cookie.
