Lentil & Veggie Stuffed Peppers

Ingredients
4 Bell Peppers3/4 c Lentils1/2 Onion1 Bag Mann's Broccoli Coleslaw4 Cups Mushrooms1/4 tsp Oregano1/4 tsp Rosemary1 tsp Thyme1 Tblsp ParsleySalt & Pepper To taste
Directions
Cook Lentils in 2 Cups of water (bring to boil then simmer for 15 minutes) drain
prep green peppers by cutting off tops & removing seeds and stems
Meanwhile cook veggies & seasonings, when soft add lentils and remove from heat

Stuff peppers with mixture and bake at 375 covered with foil for 25-30 minutes. Remove foil and bake for an additional 5 minutes.
