Creamy Asparagus and Potato Soup

Ingredients
3 c asparagus - diced3 cup potatos- peeled and diced2 tbls scallions- diced2 tsp nutmeg1 tsp saltdash pepper2 cups heavy cream4 cup chicken broth (can use vegtable stock for a vegatarian version)2 tbls flour1 tbls olive oil
Directions
1. heat oil in a large pot
2. add scallions and suate until cooked
3. sprinkle flour to coat scallions
4. add in chicken broth, cream, potatoes, and asparagus
5. cook on medium high heat, stirring, until thick and bubbly
6. lower heat and cover- cooking an additional 10 minutes or until potatoes are soft.

Serving Size: makes about 8 - 1.5 cup servings
