Ingredients
6 large carrots - grated2 large onions - sliced very thin2 heads green cabbage - shredded3 Tbs coarse kosher salt
Directions
Combine vegetables and salt in a very large bowl. Allow to rest for 15 minutes, turning occasionally.
Pack firmly into a pickling crock or mason jars using your fist, potato masher, meat tenderizer, etc. (I use two half-gallon sized mason jars and my fist. Do not screw lids on, or the fermentation gas pressure can cause jars to explode!)
Place a drop lid and weight on vegetables to keep them submerged under liquid drawn out by salt. Cover with a clean cloth and let ferment on the counter for 3 days, then transfer to the refrigerator and enjoy.
