Low Carb Cranberry Sauce

Ingredients
1 cup water1 cup Splenda12-oz bag fresh or frozen cranberries (3 cups)1/2 teaspoon freshly grated orange zest
Directions
Bring water and Splenda to a boil, stirring until Splenda is dissolved. Add cranberries and simmer, stirring occasionally, until berries just pop, 10 to 12 minutes. Stir in zest, then cool.

Cooks' note:
Cranberry sauce may be made 3 days ahead and chilled, covered.

    Love this recipe!! It's hard to find fresh cranberries except at thanksgiving, so I buy extra bags and freeze them in the bag as is. Works well!! - 2/16/09
