Quick and Easy Chicken and Rice

3 tbs Olive Oil2 medium onions1 large, red bell pepper800 g boneless, skinless chicken breast chunks16 oz packet of Vigo Yellow Rice2 cups frozen peas
1. Fry off two minced onions and one minced red pepper in a large pot
2. Add chicken chunks and push around pan till they turn from pink to white (no need to cook through)
3. Add packet of yellow rice and stir
4. Stir in 4 cups of boiling water
5. Bring mixture to a boil and turn down to a simmer with lid covered
6. When water appears to be absorbed turn off heat and add 2 cups of peas.
7. Let dish stand while peas warm up until you are ready to serve
