Easy Carrot Bread

Ingredients
1/4 cup vegetable oil1/2 cup applesauce1 cup sugar1 1/2cup sifted flour1 teaspoon baking soda1 teaspoon baking powder1/2 tablespoon cinnamon1/2 teaspoon salt2 eggs1 cup grated/shredded raw carrots (about 3 medium)1/2 cup pecans
Directions
Combine oil,applesauce,sugar,flour,baking soda, baking powder,cinnamon, salt and eggs in a large bowl. Gently stir in carrots and pecans.
Pour into a greased and floured (cooking spray can be used) 9x5x3 inch loaf pan. Bake in a 350 degree oven for 50-60 minutes.
Remove from oven and let cool for 5 minutes before removing from pan. Remove from pan and allow to cool on wire rack. Makes 15-20 slices.

    Pretty good. Made it without nuts. A dense bread but a small slice is filling. Just rember to finely shread the carrots. - 3/22/11
