Chicken Tinga

Ingredients
16 oz. of boneless, skinless chicken breasts6 medium tomatoes2 medium onions, sliced 5 cloves of garlic1/2 can of chipotle peppers in abodo sauce2 chicken bouillon cubes or 16 oz. chicken broth1 TBSP olive oil 10 corn tostadas 10 TBSP sour cream, fat free Cheese (Optional and not included in nutritional calculation) Lettuce (Optional and not included in nutritional calculation)
Directions
1. Blend the tomatoes and 1/2 can chipotle peppers in abodo sauce.

2. Place the chicken breasts in the crock pot with chicken bouillon cubes and tomato mixture from above. Add enough water to completely cover the chicken. Cook on low for 6 hours.

3. After 6 hours, heat oil in a large skillet over medium heat. Add sliced onions and minced garlic to skillet and saute.

4. Shred chicken in crock pot with a fork and add the sauteed onions/garlic. Cook everything together for another hour or so.

5. To serve, each person spreads some sour cream on their tostada shell and tops with a spoonful of the cooked chicken tinga. Lettuce and cheese are optional additions.

*Notes: I don't add the onions until the very end because I hate when they get mushy is the crock pot. I also add salt, pepper, and oregano to meet my taste preferences.

Serving Size: Each Serving Includes 2 Tostadas, 1/5 of the Chicken Tinga, and 2 TBSP of Sour Cream
