Chinatown Spinach Salad

Ingredients
6 cups fresh spinach, broken up into medium-sized pieces1 green onion, chopped2 hard-boiled eggs, chopped3 slices bacon, cooked and crumbled1/3 cup olive oil2 tbsp red wine vinegar2 tsp soy sauce1 tsp black pepper1 tsp dry mustard1-2 tsp sugar or sugar substitute
Directions
Toss first 4 ingredients in large salad bowl. If desired, sprinkle with lemon juice to keep from wilting.

Mix remaining ingredients (except sugar). Taste - if too tart, add a little sugar to taste. Pour over salad and serve.
