Mini peach cobblers

Ingredients

1 can of no-sugar added canned sliced peaches, with juice reserved3/4 cup of old fashioned (not instant) oatmeal1/4 cup of whole wheat flour6 tsp. of sucralose (like Splenda) - adjust to level of sweetnessDash of cinnamon, to tasteDash of vanilla extract, to taste
* Preheat oven to 350 deg F
* Spray 4 individual baking dishes with nonstick spray
* Open and drain peaches, reserving liquid
* Divide the peaches equally between all 4 dishes
* Mix together the oatmeal, flour, cinnamon and vanilla extract
* Add 1/2 cup of liquid from the peaches (may need to add water if necessary)
* Mix thoroughly to combine
* Divide equally and pour over the top of the 4 dishes
* Bake about 30-35 minutes until golden brown and bubbly
* Garnish with a sprinkle of cinnamon and serve
Great with a small scoop of light vanilla ice cream or whipped cream (not included in nutrition info)
