Irish Italian Vegan Stew

1 medium onion, finely chopped2 garlic cloves, minced10 sprays oil1 can (28 oz) diced or crushed tomatoes 6 cups water3 carrots, chopped into 1/2 inch chunks2 medium potatos, quartered5 basil leaves2 tsp chopped parslet1 tsp herbs de provence1 tsp low sodium salt1 tsp black pepper
Heat oil in a large pot on medium heat.
Add onion and garlic, cook until onion is transluscent, about 5 minutes.
Add remaining ingredients (except potatos) to the pot and bring to a low boil.
Simmer, covered, for one hour, stirring occasionally. After 25 mins cooking add potato. Continue to simmer for remaining time.
