Pumpkin Pie with Graham Cracker Crust

Ingredients
1 graham cracker crust (see my cookbooks for the recipe)15 oz pumpkin (not pie filling)14 oz fat free sweetened condensed milk2 eggs (or 1/2 cup egg substitute)1 t cinnamon1/2 t ginger1/2 t nutmeg1/2 t salt
Directions
Preheat oven to 425.

Whisk all ingredients together until smooth.

Pour onto 9-inch graham cracker crust.

Bake 15 minutes.

Reduce oven temperature to 350, bake 35-40 minutes.

Pie is done when knife inserted 1 inch from the crust is clean, and center is moist but set.

Makes anywhere between 8 and 16 servings - depends on how big your slices are!
