Vegan Wonder Vanilla Cupcakes

1 cup soy milk1 tsp apple cider vinegar1 1/4 cup all purpose flour2 tbsp cornstarch3/4 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/3 cup canola oil3/4 cup granulated sugar (non bone char)2 1/4 tsp pure vanilla extract
1. preheat oven to 350 F
2. wisk vinegar into soy milk and set aside to curdle (consistancy of buttermilk.)
3. sift flour, cornstarch, baking powder and soda, and salt in a small bowl. mix well.
4. in a seperate bowl beat together soymilk, oil, sugar, vanilla until frothy.
5. beat dry ingredients into wet ingredients until well mixed and no lumps (tiny lumps are okay.)
6. fill cupcake liners 2/3 to 3/4 full.
7. bake for 18-20 or unitl an inserted toothpick comes out clean.
8. transfer to cooling rack until completly cooled and frost with vegan buttergream frosting.
makes 12 yummy cuppers!
