Microwave Baked Potato

Ingredients

1 medium potatosalt & pepper1 tbsp butter or margarine (I used Blue Bonnet margarine)3 tbsp grated cheese (cheddar, mozzarella, any you like)
Wash the potato and pierce it a few times with a fork.
Microwave on high for 5 minutes, then turn it over and microwave for 5 more minutes.
When soft, remove from the microwave and cut lengthwise. Add salt and pepper to season then, using a fork, mash the insides slightly. Top with butter, 2 tbsp of cheese and any other toppings.
Return to the microwave for 1 minute then remove and top with remaining cheese.
Serving Size: Makes 1 baked potato
