Vegan Buttercream Frosting

1/2 cup non hydrogenated shortening (spectrum)1/2 cup smart balance margarine3 1/2 cups sifted confectioners sugar1 1/2 tsp pure vanilla extract1/4 cup plain soy milk or soy creamer
beat together the shortening and margarine until smooth. Add the sugar in small increments and beat for about 3 minutes. add vanilla and soymilk and beat for an additional 5-7 minutes until light and fluffy. this recipe makes approximatly 4 cups or frosting, you can half the recipe if you are spreading it instead of piping it. piping yeilds 12 servings, spreading yeilds 24 servings.
