Broccoli Soup

Ingredients
300 grams broccoli, roughly chopped1 Potato, approx 150 grams, peeled and roughly chopped1 Onion diced1 cup of 1% Milk 2 cups of chicken or vegetable Broth, Water (add as needed2 tsp Olive Oil1tsp Butter 1/2 tsp nutmegSalt and pepper
Directions
1. heat oil and butter to fry onion until translucent
2. Add potato, stock (broth) and milk to a simmer for 10 minutes
3. Add broccoli, cook a further 5-10 minutes.
4. Add nutmeg, salt and pepper to taste
5. puree til smooth and serve

Serving Size: Makes 3 meal sized serves, or 6 entrees
