Summer Vegetable Soup with Cheese

Ingredients
Carrots, raw, 2 cup, chopped (remove) *Potato, raw, 2 cup diced (remove) Peppers, sweet, red, raw, sliced, 1 cup (remove) Onions, raw, 1 large (remove) Shallots, 5 tbsp chopped (remove) *Better Than Boullion Vegetable, 5 tsp (remove) Water, tap, 6 cup (8 fl oz) (remove) *Athenos Reduced Fat Feta Cheese, 6 oz (remove) *Lemon Juice, 1 fl oz (remove)
Directions
Chop all vegetables. Saute onion and shallots in oil until translucent. Add carrots, pepper, potato and broth. Bring to a boil, then reduce heat and simmer for ~20 minutes. Sprinkle with cheese and add lemon juice. Serve hot.
