Flour Tortilla

Ingredients
2 cups all-purpose flour1 teaspoon salt1 teaspoon baking powder1 tablespoon shortening1/2 cup water
Directions
1.In a food processor, combine together flour, salt and baking powder with a few pulses. Add in shortening, and continue to pulse (approx 1 minute) until mixture resembles coarse cornmeal.
2.Add the water and mix until the dough can be gathered together. If necessary, add more water (1 teaspoon at a time) until the dough comes together. Cover the dough with a damp cloth and let rest for at least 15 minutes (but preferably an hour).
3.Divide the dough into 12 equal pieces and roll into rounds. On a lightly floured surface, use a rolling pin to flatten and stretch each round into a circle 7 inches across. (or use a small bowl as a "stencil" to cut out the tortilla).
4.Cook on a pre-heated ungreased skillet over medium high heat (as soon as you see an air bubble, flip!). They are done when small brown spots appear. This should only take 30-45 seconds each side.
5. Serve immediately!

Serving Size: Makes 12 7" thin tortillas.
