Tempeh, Sprouts & Veggie Supreme Salad

Ingredients
- 1.5 c Spinach & Arugula Blend- 1/4 c Cucumber, sliced- 1/4 c Mushrooms, sliced- 4 Cherry Tomatos, halved- 25 g Diced Bell Peppers (mixed colours)- 1 tbsp onion, chopped- 1 stalk Celery, chopped- 1 Carrot, small, chopped- 1 tbsp Feta Cheese- 1 tbsp Pine Nuts- 0.25 c Mixed Sprouts- 2 tbsp Balsamic Vinegar- 25 g Soy Red Pepper Tempeh (I like Henry's Gourmet)
Directions
Steam tempeh over boiling water for 1 - 2 minutes, place on grill for 1 - 2 minutes, flipping halfway. Cut into small chunks.

Toss all other ingredients and top with the tempeh

Sprinkle on a little bit of pepper to taste and enjoy!
