4 cups Zucchini1 cup mushrooms1 cup onions1/4 tsp basil1/4 tsp oregano1/4 tsp garlic powder1/4 tsp parsley1/2 tsp salt1/2 tsp pepper2 cups mozzarella cheese2 eggs (well beaten)1 pkg crescent rolls(or whatever crust you prefer)mustard
Cook zucchini and onion and mushrooms in 1/2 cup margarine( I use 2 tbsp coconut oil) about 10 minutes or until soft.Add basil, oregano, garlic powder, salt, parsley and pepper. Mix cheese and eggs together. Add mixture.Use crescent rolls to form crust(or whatever you use).Brush crust with mustard and add zucchini mixture.Cook at 375 degrees for 20 minutes.Remove and let sit for 10 minutes.Serves 8 large slices
