Harry Potter Party Chocolate Frogs (coconut filled)

Chocolate Shells: 4.5 Bags of Semi-Sweet Chocolate Chips (I melted 5 but didn't use all of it)Coconut Filling:2 14 ounce bags of coconut 1 can sweetened condensed milk (I use Fat Free)1/2 cup butter, softened 1 lb powdered sugar
I used 3 of the molds so that one was always ready for the next step as I went along. These can be made with whatever filling you'd like but this is the coconut filling I used.
Filling:
(This can be done ahead of time and kept frozen till needed. It makes a really big batch and my estimate is it will fill 100 frogs.)
*Mix everything in a bowl together until blended thoroughly.
Making Frogs:
* Melt chocolate chips in a glass bowl in the microwave. Stir between 30 second intervals of melting. Keep out a few chips and add them at the end to cool the chocolate down so it doesn't scorch. You DO NOT want overcooked chocolate!
*Using a fine pastry brush, cover all surfaces of the frog. You may have to go back over each one after you finish the tray to make sure it hasn't pooled at the bottom. It needs to be thick enough that it won't come off when you're breaking the frogs out of the mold. Put the tray in the freezer for at least 5 min afterwards.
*Fill the hardened chocolate shells with the coconut filling. Pack it in well so that you have nice layers. Using the pastry brush, drizzle and smooth more chocolate over the filling to make the bottom of the frog. Clean around the frog so that it'll be neat when it comes out. I didn't do a good job of this. Put it back in the freezer for 5-10 more min.
* They don't fall right out of the tray. I twisted them slightly and gently bounced the tray on the table before trying to remove them. I had to gently press along the top to make them pop out.
*It's best to store them in the fridge for awhile afterwards to make sure they keep their shape, I only touched them by the face to keep the detail along the back.
