Mini Turkey Bacon & Potato Quiches

Ingredients
6 large eggs & 6 egg whites (Total 2 C. egg product )4 C frozen/refrigerated shredded pototoes12 pcs. turkey bacon, cooked & diced6 triangles of light laughing cow3.5 oz. shredded cheddar1 c. chopped onion
Directions
Preheat oven to 350 F
Coat nonstick muffin tins with cooking spray
Beat eggs, then combo all ingredients EXCEPT cheddar until well blended.
Spoon equal amounts of mixture in muffin cups .
Bake 15 minutes or til egg sets. Sprinkle evely with cheddar & bake 2 minutes more or til cheese melts
Remove from oven and let cool 5 minutes before serving.
