Mediterranean Stuffed Mushrooms

Ingredients
1 T olive oil16 oz whole mushrooms - stems removed and chopped1/2 c red pepper chopped1/2 c onion chopped2 c spinach chopped2 cloves garlic minced1/2 c reduced fat feta1/2 c panko bread crumbs
Directions
Heat olive oil in skillet on medium. Add mushroom stems, red pepper, onion and garlic. Saute 5-8 minutes. Add spinach and cook until wilted down. Put veggies in a medium bowl to cool. Add panko and feta and mix. Spray baking sheet with cooking spray. Place mushrooms on sheet and stuff with mixture. Bake at 375 in preheated oven for 20-25 minutes.
