Homemade Johnnycake Double Batch

4 cups flour. 4tsps. baking powder. 2tsp. salt. 2tbsp. sugar =6tsp. 2tbsp. shortening(crisco). Approximately 2cup water to make a firm dough. This makes a double batch.
Place all ingredients except water in a mixing bowl and using spoon or CLEAN hands,mix thoroughly. Add just enough water to make a firm dough. Turn out on board and knead until smooth. Let stand 10min. Place in hot fry pan (castor iron) which has been well greased and flatten to fit the pan. Fry @ medium heat until brown and crusty,turning several times. Then lower flame and finish cooking,about 15min-30mins. Keep checking. Will be thicker. Cut in 8 larger serving wedges. Or 16 smaller serving wedges for fewer calories. Whatever works for your calculations for that day. ENJOY!!!!!!!!
