Crock Pot Ranch Pork Chops with Potatoes

4 boneless pork chops3T Olive Oil3T RF Sour Cream1oz pkt Hidden Valley Ranch Dressing & Seasoning Mix4 small-medium white potatoes1/4c chopped green pepper1/4c chopped onion
Lay chops in bottom of crock pot
Throw in olive oil, sour cream, and ranch mix
Cut potatoes into large bites and arrange them on top (of course sweet or red potatoes would be healthier but white is all I had)
Set crock pot to low (on mine it's the 10-hr setting, mine cooks hotter than recipes usually)
Check occasionally, stirring as you check
Throw in the green peppers and onions during the last hour of cooking
