Gremolata London Broil

Ingredients
3 lemons2 sprigs of Rosemary2 TBL parsley3 TBL capers8oz London Broil4 cloves Garlic2 springs of Thyme2 Bay LeavesSalt & Pepper to Taste/season1/2 cup chicken broth
Directions
Heat oil in a very hot pan. Season steak with salt and pepper. add the steak to the pan and sear on all sides (2 1/2 min on each side) lightly crush the garlic and add to the pan with the rosemary, thyme, and bay leaves and allow to infuse. Add a 1/4 cup of broth to the pan. using tongs roll the steak in the evaporating stock. remove steaks from pan and allow the steak to sit. Mix Gremolata mix zest of lemons, chopped parsley, and drained capers and mix together. Season to taste and set aside. Slice the steak and top with the Gremolata mixture.
