Northern Style Tofu (Guo Ta Dou Fu)

Ingredients
3 lbs firm tofu1/2 cup oil1/2 cup cornstarch3 large eggs, lightly beaten1 tbsp minced gingerBraising Liquid: 2 cups broth 2 tbsp rice wine 2 tsp salt 1/2 tsp sugar2 tsp sesame oil2 tbsp minced or julienned scallion greens
Directions
1. Cut drained and pressed tofu into 1.5 squares that are ~ .5" thick.
2. Heat oil in wok until quite hot. Dredge each piece in cornstarch, dip in beaten eggs to coat. Place batch of tofu in wok to fry over medium heat until golden brown on both sides (~3-4 mins per side). Remove with slotted spoon and drain on paper towel. Finish all tofu. Save at least 1tbsp oil for later.
3. Reheat wok, add the reserved tbsp of frying oil. Heat until very hot but not smoking. Add minced ginger and stir fry for about 5 secs until fragrant. Then add braising liquid and heat until boiling. Add fried tofu, and pierce the tofu pieces with a fork so that they will absorb the cooking liquid. Cook uncovered 20 mins over medium heat or less if all of the liquid gets absorbed. Dribble sesame oil over the tofu, toss lightly to coat, sprinkle green onions over top, and served.
