Black Bean Salad

Ingredients
1-15 oz can black beans, drain and rinse1 can sweet corn (drained) or refill bean can with frozen sweet corn1 28 oz can ro-tel diced tomatoes with green chilies (partially drained)1/2 bunch cilantro, rinsed and chopped 1/2 large red onion, chopped fine2 cloves garlic, mincedDressing:2 Tablespoons vinegar2 Tablespoons Extra Virgin Olive Oil2 Tablespoons lime (or lemon) juice1/4 teaspoon salt1 teaspoon ground cumin1/4 teaspoon pepper
Directions
Toss first six ingredients. Whisk dressing in a small bowl and pour over salad. Toss to coat well. Refrigerate at least 1 hour before serving.
