Onion Maramalade

Ingredients
1T Butter2 cups Onion, sliced thin2T Water1T Thyme, fresh (or 1/2 tsp dried Thyme)2 tsp Brown Sugar1/4 cup Cider Vinegar1/4 tsp Dry MustardSaltGround Red Pepper1 Bay Leaf
Directions
1.) In saucepan melt the butter. Add onions and water. Cook about 20 minutes until tender.
2.) Stir in brown sugar and cook 2 more minutes. Add vinegar, mustard, salt (to taste), red pepper and bay leaf.
3.) Bring to a simmer and cook another 6 minutes, until most of the liquid has dissolved. Remove bay leaf and cool.

Serving Size: Makes about 8 servings
