Flank Steak with Chipotle Yogurt Sauce

Ingredients
1 lb flank steak1/4 tsp of each : salt, pepper and grounded cuminFor the sauce:1 garlic bulb (unpeeled)1 tsp olive oil1 c. Non-Fat Greek-Style Yogurt1/2 c. fresh coriander (dried also works)1/4 c. green onion, minced1 tbsp dried chipotle1 tsp paprika1 tsp granulated sugar1 tsp of each : lime zest and juice (or more, to taste)1/4 tsp saltPinch of grounded cumin
Directions
For the sauce:
Cut the top of the unpeeled garlic bulb, drizzle with olive oil and wrap it in foil. Roast it in a 350° oven for about an hour or until garlic cloves are very tender and can be pressed out. Let cool in a bowl.

Incorporate the yogurt, coriander, onion, chipotle, paprika, sugar, zest and lime juice, salt and cumin. Mix well.

Sprinkle flank steak with grounded cumin, salt and pepper. Grill on the BBQ for 8-10 min (total) turning the meat once.

Transfer on a cutting board and cover with foil for 10 min. Cut and serve with the sauce.
