Black Bean & Veg Burgers

1/2 large onion, diced1-2 tbsp olive oil1 small zucchini, diced2 cloves garlic, minced1" ginger, minced5 leaves and stems Swiss chard, chopped2 green onions, sliced thinly2 tbsp cilantro, coarsely chopped1 can black beans, rinsed2/3 c cooked quinoa1-1.5 tsp Frank's Red Hot Saucesalt & pepper to tasteother spices to taste, e.g. cumin, mustard, paprika
Sauté the onion until translucent. Add zucchini and sauté for another few minutes until softened. Add garlic and ginger. Sauté for another few minutes. Add in chard and cook until wilted.
Remove from heat.
Preheat oven to 375F.
In a large bowl, add rinsed black beans, cilantro, green onions, salt, pepper, hot sauce, and desired spices. Add in sautéed vegetables and cooked quinoa.
Use an immersion blender to mix. Using an ice cream scoop, recipe will make 11 decent sized patties.
Bake on each side for 15 minutes, flipping halfway through.
