Homemade Bran Muffins

1 cup Post 100% Bran cereal2 cups Kellogg's All-Bran cereal1 cup boiling water1/2 cup margarine1 1/4 cups sugar1 eggs, beaten2 1/4 cups flour2 1/2 tsp. baking soda1/2 tsp. salt2 cups buttermilk
Combine Post bran and water. Cream margarine and sugar, and add to bran. Add eggs. Mix dry ingredients, and add alternately with buttermilk, then add Kellogg's All-Bran.
Keep up to 4 weeks in the refrigerator.
Bake in muffin cups at 350 degrees for 25-30 minutes.
Makes about 24 small muffins.

I liked this recipe. I used Splenda for the sweetener and added 1/2 tsp allspice, 2 Tbsp Splenda Brown Sugar Blend and 1/2 cup mix-ins (cranberries, walnuts, etc.; in whatever ratio you like.) Also,I found that crushing the cereal for the last step made a better tasting muffin that rose more. - 3/4/08
