Fluffy Strawberry Crepes

1.25 cups Fat Free milk3/4 Cup Egg Substitute3/4 tsp. vanilla extract1 cup flour1 tsp. sugar1/4 tsp. salt2/3 cup strawberry spreadable fruit (I used preserves)3 cups chopped fresh strawberries2 tsp. powdered sugar
1. In a mixing bowl, combine the milk, egg substitute and vanilla. combine thef lour, sugar and salt; add to milk mixture and mix wiell. Cover and refrigerate for 1 hour.
2. Coat a 7 or 8 inch nonstick skillet with nonstick cooking spray. heat skillet over medium heat. Pour about 2 T batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to plate; keep warm. Repeat with remaining batter, coating with additional nonstick cooking spray as needed.
3. Spread each crepe with about 2 tsp. spreadable fruit. Top with about 3 T strawberries. Roll up, sprinkle with powdered sugar.

I cheated and use 50 calorie each Frieda pre- made crepes, but that said I took your idea for the filling and it was wonderful. Loved the strawberry combo with smuckers low sugar jam, I also saw an idea in another spark recipe to add cottage cheese-so added daisy 2 % 1/8 cup to each also. Thank you - 1/7/17
